Attracted by painting very soon, Jean Dreyfus-Stern became one of the pupils of Charles-François-Prosper Guérin (for painting) and Bernard Naudin (for engraving) before attending the Académie Colarossi and Maurice Denis and his workshops. In his landscapes (in particular Brittany and Honfleur landscapes), "colors are sincere as in the works of his friend Louis Neillot", he is also one of the rare artists of his time to have invested in the circus and sport subjects.
